Also, the fact you lot used ground beefiness would only be risky if information technology was not thoroughly cooked, eg burgers that are nonetheless pinkish in the middle. Not an consequence with meat sauce.

the meat'south cooked, so should be fine if you reheat it properly past bringing back up to the eddy, and simmering for long plenty to heat through. I do this all the time with sauce that'south left out up to 24 hours.
If yous haven't read this article by Harold McGee, information technology's pretty interesting. For stock, a 10-minute boil will kill bacteria and denature toxins. But in the terminate, what'due south important to remember is that while risks of being afflicted at all may exist minor (lots of people routinely leave spaghetti at room temperature and are fine), the possible rare event can be really serious. http://www.nytimes.com/2011/08/24/dining/bending-the-rules-on-bacteria-and-food-safety.html?_r=0
My mom use practise this. She grew up in a humid tropical climate with little refrigeration and she would boil soups and sauces for a good ten minutes. She said this kept the nutrient from going bad, but warned that it was only good a couple of times.

It's fashion more price effective to throw information technology out instead of spending it at the emergency room with food poisoning.

It'south actually your call since y'all're going to field "get ahead and eat it" and "no way, toss information technology" answers in this forum every bit you would at any food-related forum (not just Food52).
In the summer, when my kitchen doesn't cool downward that much, I'd probably toss it. During a typical winter night, my kitchen gets considerably cooler (although nosotros've been having a warm spell for the by week).
If there's a strong acid component (similar tomato plant), I'll probably go alee and serve it. If there'south dairy in the sauce, I'd hesitate.
Once more, your call since no ane is going to your firm to test for microbial growth.
Practiced luck.
I agree. If you were asking 100, or fifty-fifty 50 years ago, the answer would be it'south fine, eat it. Nowadays, the aforementioned affair is considered fatal. I don't know if this change is because the ingredients are so different now that we have feedlot meat, or because we accept an authority helping u.s. make up one's mind what's safe to eat. It's going to be upwards to y'all to make up one's mind. Generally, if there is dubiousness, toss it out.
Then again, if information technology was in my kitchen, this fourth dimension of year, where the kitchen spends the nighttime below ten degrees C, I would probably bring it to a proficient boil for 20 min then eat it. If I kept my house heated at nighttime, then I wouldn't hesitate to toss information technology in the compost.
8 hours at room temp for ground meat? that'due south a serious risk. i wouldn't eat anything that was at room temp for longer than two hours and i'thou pretty piece of cake going as far as food prophylactic goes. i'd toss information technology unless you want to feel the effects later on that night...

I am not the FDA, but my feeling is that if information technology was fully cooked, and there is some salt in the sauce, I would swallow it...
